Selected duck, boned and stuffed by hand, turkey, suckling calf, fine black truffle, first choice genuine Parmesan cheese, vegetables, pistachios, etc. and tied by hand.
This preparation is also available without black truffle, a prized ingredient but not appreciated by all palates.
Served cut into half moons 1 cm thick with a salad of blanched potato sticks and prized black truffle. Or with a delicate paté of penny bun mushrooms and black truffle, or buttered croutons and vegetable paté. Try the version without truffles, too, with a salad of dried fruit and grapes, or even with a pickle of pumpkin, black fig and pears or with a mixed fruit and spice compote. |
