Taking inspiration from the celebrated "Roast Suckling Pig", we have created a lighter, but delicious Roast Suckling type Turkey.
Always a large bird, but considerably smaller than its big sister, this recipe is prepared only with female turkeys.
The meat of the young female turkey, in fact, is more prized than that of the male, and it is ideal for high gastronomy because of the flavour and delicacy.
Boned and stuffed by hand, using only the rump of the turkey, it is enriched with the celebrated wild fennel, the only kind that can be used for any recipe worthy of being referred to as "Suckling".
Hand tied with coarse string, the "suckling" turkey is then oven cooked at a low temperature.
It is ideal for farmhouse-style dishes and dinners, reminiscent of how life used to be in the country. Served with various types of oil, preferably robust and flavoured with aromatic herbs such as rosemary, sweet garlic, chervil, sage and, above all, wild fennel. Excellent with sautéed seasonal vegetables and with artichoke or asparagus mousse, etc. ... and bread croutons.
