A combination between 2, 4 and 6 teeth male cattle is acceptable. The meat should be cleaned, slaughtered according to the Islamic rites, weighting MIN. 340 kgs per live head, fat class 1.2.3. visible fat not more than 7 PCT. Cuts: A) Hindquarter: the boneless hindquarter cuts are derived from a round and comprise the following cuts: Topside, Silverside, thick Flank and shank in natural proportion. Max 37 PCT of total amount. Note: hindquarters cuts should be placed in black marking boxes, net weight from 25 30 kgs. B) Forequarter at the 5th ribs: the 5th rib forequarter includes the following cuts: shoulder (Blade clod), chuck roll, chuck meat square shin and brisket. Max 50 PCT of total amount. In red marking boxes. C) Neck meat derived from the 7th axis, about 13 PCT from total amount. Neck meat should be placed in separate cartons with yellow marking.
