Long before the arrival of the Europeans to the New World, the pecan served as enrichment of the diet of the tribes in the central and southern regions of the United States. The pecan is without doubt the most important edible nut coming from the United States and one of the famous persons partial to them was George Washington who frequently carried them in his pockets and Thomas Jefferson, who dedicated part of its time to its cultivation.
It slightly resembles the walnut, but longer in shape, the pecan has a smootber shell and a higher proportion of kernel in its shell. The pecan nut is extraordinarily rich in fats and calories.
The principal producing countries are the U.S., Mexico, China, India and Israel.
Pecans are marketed in inshell or shelled form and can be eaten raw or roasted. It is used in the bakery, confectionary and dairy industry, in chocolate, ice creams.
The wood of the pecan tree is highly appreciated for its timber and used as decorative panelling.
