this ewes cheese is the most important and well-known cheese outside spain. it is exclusively produced in the castilla-la-mancha region. the shape of this cheese is very characteristic and well defined due to the traditional use of esparto grass moulds that imprint a zigzag pattern on the cylinder sides. the small wooden boards used for pressing the cheese also imprint the typical wheat ear pattern on the top and bottom of it. its flavour is full, persistent and has the aroma of ewes milk with a slightly piquant and salty taste. the vacuum packaging system guarantees the conservation of the intrinsic characteristics of the cheese until it is opened.
