Smoked at temperatures between 70 and 90 F for up to 16 hours, the result is an essentially raw product with a high moisture content. Cold smoking involves five steps: salt or brine curing, draining, drying, smoking and cooling. Curing--A process that both preserves and adds flavor to seafood, curing is performed before smoking, either with a brine solution or using a salt-and-seasoning mixture. Curing reduces the moisture content of the fish so that the growth of bacteria is inhibited. Hard-smoked--Hard-smoked seafood has been cold-smoked for as long as several weeks to create a hardened product such as salmon jerky. Hot-smoked--Smoked seafood that has been cooked. Hot-smoking requires temperatures from 120 to 200 F for up to 12 hours, which essentially cooks the seafood. The result is a product that is firmer and drier than cold-smoked seafood. Hot-smoking involves six steps: salt or brine curing, draining or surface drying, drying, smoking, cooking and cooling. Kippered--The term "kippered" imparts a different meaning depending on region. Kippered refers to cold-smoked seafood-typically herring-in the British Isles; however, in the United States, it usually refers to hot-smoked seafood with a high moisture content. Also known as Northwest-style smoked salmon. Lox--Originally the name used for cold-smoked salmon that has been cured in brine for up to a year, resulting in a product saltier than most other kinds of smoked salmon. The term lox, however, is now used to describe any cold-smoked salmon. Liquid smoke--The smoke of wood burned at extremely high temperatures that has condensed into liquid form. Hickory, apple, mesquite, and other woods are used to create a condensed smoke residue, which is then purified and bottled. Added to the brine solution in the curing of fish, it imparts a smoky flavor and color. Northwest-style--A type of hot-smoked seafood. Northwest-style is the more common name for kippered salmon in the United States. Nova-style-The most common name for cold-smoked salmon. The term "Nova" refers to Nova Scotia, traditionally a large supplier of atlantic salmon to East Coast smokehouses.
