NISIN is a polypeptide which is made from Streptococcus lactic. It is made up of thirty-four amino-acid residues. In addition, it is a natural, nonpoisonous, secure, effective and no any side effects food antiseptics. NISIN is grayish white or yellowish powder.
The antimicrobial spectrum of Nisin shows that it can kill or inhibit G+ which can make foods putrefactive, especially to bacterial spore which has tolerance towards pasteurization and bacillus alcalophilus.
