| Detailed Product Description: |
A. Product characteristics:
1. Low gelatinization temperature and high viscosity.
2. Good transparency of pasty solution, long paste thread, be able to substitute for potato starch.
3. Strong emulsification, be capable to well integrate fat of meat, glossy slices and exquisite mouth feeling.
4. Entails good resiliency on meat products, crispy mouth feeling.
5. Good freeze-thaw stability, the mouth feeling of meat products processed with the starch is unchanged through freeze and thaw.
6. Strong ageing resistance, the meat products processed with the starch is no raw throwback after a long storage.
B. Product function:
This product mainly plays a role as thickener and stabilizer in meat products: owing to a functional group introduced on one of the hydroxyl groups, it entails the characteristics of low gelatinization temperature, high viscosity, good transparency and strong ageing resistance on end products. High-viscosity modified starch makes meat products a compact texture, good slices and crispy tasting and plays a role as a best thickener. Good transparency and glossy slices make a meaty appearance and strong ageing resistance. With adding the starch, meat product has no water separation when refrigerate it, a fresh taste and a longer shelf life because of its good stability.
