The worldwide production of high fructose syrup (HFS) is currently about 8 x 109 kg/a. The most common process for making HFS from corn involves four major steps. First, the corn is wet milled to extract the starch. Enzymatic or acid hydrolysis of this starch then produces a feed stream that is about 94% glucose. Third, enzymatic isomerisation turns the glucose into fructose. As the enzymatic equilibrium constant for this step is roughly one, the maximum achievable fructose concentration is about 42%. Finally, if necessary, chromatographic enrichment of the syrup is used to increase the fructose concentration.
Fructose is the sweetest of all naturally occurring carbohydrates (relative sweetness ratings: fructose 128, sucrose 100 and glucose 67). For many applications, the sweetness of glucose-fructose syrup has to be increased to the level of sucrose. This means raising the fraction of fructose in the syrup by chromatographic enrichment to 55% (HFS-55).
