White processed rice, Indica, with long narrow B grain, length-width ratio above 3.
Extremely popular in Eastern countries and in America it is distinguished by its long, narrow, pointed grains, almost transparent, whose hard and compact consistency yields little starch during cooking , a feature which makes this rice unsuitable for the preparation of risottos but extremely suitable for steaming, a process which enhances the characteristic flavour of sandalwood. It is also ideal as a side dish to meat and fish, curries, cold rice and pilaf rice.
