Quince paste, or Membrillo, is a traditional Spanish delicacy made of quince fruit. It is usually cooked into a firm reddish paste with sugar and is eaten with matured cheese, such as Manchego, Idiazabal, Roncal... The sweet and floral notes of the quince meat contrasts nicely with the tanginess of the cheese.
