Chilli pastes (sambals) come in many flavour varieties, but Sambal Oelek and Sambal Manis are the most common types. Sambal Oelek is slightly spicy, whereas sambal Manis is a sweeter chilli paste.
They are used in different ways in Indonesian cuisine. Use sambals a cooking ingredient in most Indonesian dishes and also as a table condiment, to spice up your food.
It all started with homemade sambals (chilli pastes) and ketjaps (Indonesian soy sauces) created in my parents' kitchen. These days are long gone.
