Plant
The blue agave plant is native to the volcanic soil of southern Mexico and is similar in appearance to a 5 to 8 feet tall aloe vera plant. Its core (piña) is the source of blue agave nectar.
Nectar
The nectar of the blue agave is a syrupy blend of simple sugars produced from the piña's juices and is a sweetner of low glycemic index between 20 and 31 GI.
Production
Sap is extracted from the piña, filtered and gently heated at temperatures no higher than 118 degrees. Heating the sap transforms carbohydrates into simple sugars, giving blue agave nectar its distinct taste.
Taste
Blue agave nectar is sweet and comparable to honey in taste. It is commonly used as a general Sweetener.
