AMARANTH is the dry and mature seed of the species Amaranthus caudatus L.

Amaranth is the dry and mature seed of the species Amaranthus caudatus L.  In Peru they exist for more than 1200 varieties of amaranth.  Our amaranth is of "the Centennial" variety, that is whitest.

Amaranth belongs to the same botanical branch that includes Vegetables like the beet or the spinach. However, amaranth has high starch content, as many of cereals and has a remarkable nutritional profile thanks to its protein’s content (13 to 18%) and stops lysine levels.
