AQUAFIBRE S is a great innovation into the world of functional fibres. This product takes origin from a great number of tests made by Campus S.p.A. in its pilot plant (in Parma, near Milan, in Italy) and from the long,deep and consolidated experience of its technologists. Generally speaking common vegetable fibres bind a little bit of water because of their natural content of cellulose. Cellulose has a limited capacity of absorbing water and even more limited capacity of retaining this water in a stable way during the food processing.

AQUAFIBRE S is not based on cellulose but on natural soluble polisaccarides (long chain sugars); it means that this new Campus product has outstanding new rheological properties:

  1. it is a high soluble fiber;
  2. very high cold viscosity and water absorbtion;
  3. capacity of making soft gels with cold water;
  4. real stable retention of water in every condition;
  5. stability from very low to very high pH;
  6. behaves like a chemical gum but it is 100% natural and free of additives and EEC numbers;
  7. synergy with native starches (reduce or eliminate retrogradation);
  8. protection of Frozen Food from water crystallization;
  9. useful and effective in a wild range of food products (brines to be injected into cooked hams, emulsified products, ice-cream and sherbets, Bread to retard staling, acid and non-acid soup and sauces, fillings, etc).
