The Product:
Vineyards: Garganega 40%, Trebbiano 20%, Tocai 10%, Cortese, White Pinot, Riesling and chardonnay combined 30%.
Productive Techniques: Uses the Guyot system of vine cultivation, producing 70 hl of wine per hectare. Manually harvested at their optimum maturation for the different types of grape - the first being in September, finishing in October for other varieties.
Gently pressed with reduction of the temperature ending in 5°C for maceration, which lasts about 24 hours. Only the prime must is used and fermented in steel vats, at a temperature of 18° C. After the alcoholic fermentation, this wine is refined on noble lees partly in barriques (large oak barrels) and partly in steel vats for about 6/8 months.
Characteristics: Pale straw yellow colour with golden reflections, distinct bouquet of perfect intensity with an unmistakable hint of mature fruit leading to a light touch of vanilla. Harmonic and velvety flavour with a good body and an elegant depth of vanilla.
Alcoholic Content: 13,00% vol.
Combinings:Compliments both shellfish and fish in general. Served: At a temperature from 10° C to 12° C in a white Wine glass.
