Breadzyme : is based on enzymes, oxidants and permitted food ingredients. Breadzyme has broad funtionalities which combine dough relaxation, dough tolerance, high oven spring, good volume and fresh keeping properties.
Advantages:
1) It is a dough conditioner and improves flour and fermentation tolerance.
2) It brings down the quantity of fat substantially without any change in quality of end product.
3) It serves as a volume booster in yeast raised bread and therefore has a positive effect on oven spring.
4) It gives longer shelf-life to bread increasing the water holding capacity and preventing staling of product.
5) It improves crumb texture, imparts softness to loaf and gives whiter slice color.
Application:
The recommended dosage of Breadzyme is 0.5% based on the flour weight. If the dosage of Breadzyme is sufficiently high, the quantity of fat in the receipe may be considerably reduced without affecting quality aspects.
Breadzyme is to be added along with other ingredients such as sugar, yeast etc during the mixing stage. When using Breadzyme , the dough temperature should be maintained at 28 deg C.
Packing: Breadzyme is available in standard 25 kgs hpde drums.
Shelf-life: The shelf-life of Breadzyme is 6 months when stored below 25 deg C.
