Descrizione generale:
La cagliata è una massa gelatinosa, composta da particelle di caseina, ottenuta durante la lavorazione del formaggio, con l''aggiunta del caglio al latte per favorirne la coagulazione. 
È caratterizzata da un reticolo tridimensionale che trattiene nelle sue maglie siero e globuli di grasso. 
Le contrazioni della cagliata espellono poi il siero per conservarne, invece, la componente grassa.

E'' un formaggio semiduro, prodotto dalla pastorizzazione a 72 ± 2°C per circa 15 secondi di latte di mucca e non è un prodotto per il consumo diretto.

 

1)       Product definition:

 

Cagliata is a semi hard cheese, producer from pasteurized at 72 ± 2°C for 15 second cow’s milk and intended not for direct consumption, there are no preservatives, whitening agents or any other additives.

 

Outer appearance:             closed dry surface, creamy white colour

Inner appearance: homogeneous without holes

Consistency:                      medium firm, elastic, good string forming properties

Taste/odour:                      mild, slightly acid

 

2)      Ingredients:

 

Cow’s milk, salt, culture (witch Streptococcus thermophilus and Lactobacillus helveticus) and microbiological rennet Proteinaze – pepsin from mould Mucor.
