Black pepper is the king of spices, is one of the oldest and the most popular spice in the world . Pepper is now cultivated in tropical areas around the world and in Cochin-China; also it is cultivated in East and West Indies, Malay Peninsula, Malay Archipelago, Siam, Malabar, etc.
Ingredients : Black pepper is an excellent source of piperitone, piperine (pungent resin and volatile oil). Black pepper contains about 3% essential oil, whose aroma is dominated (max. 80%) by monoterpenes, sabinene, beta-pinene, limonene, terpinene, alpha-pinene, myrcene, delta3-carene and monoterpene derivatives (borneol, carvone, carvacrol, 1.8-cineol, linalool). Sesquiterpenes make up about 20% of the essential oil: beta-caryophyllene, humulene,beta-bisabolone and caryophyllene oxide and ketone. Phenylether (eugenol, myristicin, safrole) are found in traces. The most important odorants organoleptically in black pepper are linalool, alpha-phellandrene, limonene, myrcene and alpha-pinene. Black pepper contains volatile oil (including beta-bisabolene, camphene, beta-caryophyllene, and many other terpenes and sesquiterpenes), up to 9% alkaloids (especially piperine, largely responsible for the herb's acrid taste). Other Constituents of Black pepper are chavicine; piperamine; piperyline; pipenoleines, pipercide; dihydropipercide; piperamides, bioantioxidants.

Black pepper CO2 extract recommended concentration in food, beverages, food supplements and natural remedies is 0.01 1%. Replacement rate of dry Black Pepper with Black Pepper CO2 extract is 25 g with 1 g correspondingly. For convenient use, it is recommended to dilute the extract in any Vegetable oil (sunflower, olive, grape seed, etc.) in ratio of 1:20 before use as food additive.
