The cheese factory has turned into a big cheese production enterprise in the far 1973 from the will of the brothers Francesco - Michele - Elio and Giuseppe Serra , to follow with unchanged passion the family tradition for the production of the mozzarella made of female-bull milk from Campania.
The Serra family , always careful about the protection of their product , to obtain a milk of elevated quality , raises its bulls following the old alimentary tradition , but using modern criteria of distribution of the natural feeding . Undamaged sanitary status and much care for the hygiene during milking , collection and production are quality standards obtained with tenacity and assiduousness of the verifications.
A scrupulous respect of rules in the production of mozzarella di bufala campana D.O.P., by using exclusively whey obtained from the day before working for curd fermentation, an handmade spinning, the rest of the product in firming bathtubs, and its settlement in brine make this mozzarella a unique and inimitable product both for its flavour and for its consistence.
From this love and experience in working buffalo's milk other products were born: Provola smoked with a traditional method, the very delicate Ricotta, and the tasty Cicciottello Olimpico (caciocavallo di bufala).
