ingredients:
1 cup self-raising flour
1 cup brown sugar
1 cup Dessicated Coconut
125g butter, melted
250g butter, not melted
2 tins condensed milk
6 tbsp golden syrup
200g dark chocolate melts

preheat oven to about 180C. spray heaps of non-stick spray in a lamington pan (that’s what the recipes say, but i don’t own a lamington pan so i just used a big square oven tray that’s nice and deep for all the layers).

combine flour, sugar, coconut and melted butter in a big bowl. you’ll have to stick your hands in and mush it all around to mix it properly. press the mix into the tray and bake for about ten minutes. if it comes out of the oven all puffy, you’ll need to press it down again – i found that the easiest way to do that is to cover it with baking paper and then use a clean tea towel to press down hard on the biscuit mixture.

next, the caramel. stick the butter, condensed milk and golden syrup in a saucepan and cook them on medium heat, stirring constantly. you’ll be able to tell when it’s ready because it will be thick and golden and… caramelly. don’t worry if it won’t thicken enough, because it will thicken in the oven.

once the biscuit base is only luke warm (NOT still hot from the oven), pour the caramel over it. stick it back in the oven for about fifteen minutes or until the caramel is golden and sticky and a little bit crunchy around the edges. put it in the fridge for half an hour or so to cool it down.

melt the chocolate on very low heat and pour over the slice. you might need to spread it around with a knife to get an even top. it’ll need to go back in the fridge for another half an hour or so, then it’s ready to be sliced and enjoyed!
