Chontaduro in brine
The peach palm fruit is an exotic and tropical fruit of more nutritional value, it has some huge advantages in intake of proteins, oils, soluble fat, vitamins and minerals, it contains 2.5 to 4.8% of high-quality protein, high amount of essential amino acids, consisting of fine fat and unsaturated oils high in Beta-carotene, phosphorus, vitamin A, iron and calcium. It also contains vitamins B, C and E.
"It's like small nutritional factory plant and probably the most balanced food in the tropics," according to the concept of the National Academy of Sciences of the United States.
The fat content of the fruit makes this an important source of polyunsaturated fatty acids omega 3 and omega 6 (linoleic, linolenic) essential for nutrition, growth, hormonal and lower cholesterol. These oils are 61% content.
Saturated fatty acids are between 36% and 41%, occurring at an intermediate point between the olive oil, sunflower and palm.
Chemical analysis revealed a composition of peach palm equating this result with the egg and other foods that can be considered as an industrial alternative.
