Ruby Snapper- Is one of Bali's most abundant deep water snappers available. It's commonly known by its Japanese name Onaga. In Hawaii, where it's also an important export fish, it's calle Ula-ula. Onaga is also used as a substitute for opaka paka, the Gold Banded Snapper.The ruby snapper range in size from 500gram to about 8kgs but the most caught are in the range 2-5 Kgs range. The best season for ruby or onaga is during the winter months when the fish has the highest fat content.Ruby snapper has a delicate Flavour that's enjoyed when served raw, (Sashimi Style) or when baked, steamed or prepared in a host of other ways
