The Artichokes just picked by the peasants of Ittiri are deprived of the first external and hardest leaves, deprived of the thorns and finally turned on the side of the trunk and immediately washed. They are boiled and very carefully placed in containers, filled with oil and plugged.
The Fratelli Pinna, owner since 1940s of olive groves near Sassari in Sardinia, is one of the most admired Italian producers of high quality extra virgin olive oil moved by passion in the harvest of olives, in full respect of nature and consumers needs. For the production of extra virgin olive oil, they use a crusher characterized by a two-phase continuous cycle system that works in total absence of oxygen. This system, composed of machines connected in series with each other, guarantees continuity to the entire process and at the same time avoids the oxidation of the oil, keeping intact all the nutritional and organoleptic
characteristics naturally present in the olives. They offer also a wide range of vegetables in oil , Wine and typycal pasta from Sardinia region.
