Properties:
White powder; Soluble in water but insoluble in ethanol; Relative density 2.45g/cm3and melting point 890; Deliquescent in the open air. Its aqueous solution shows weak alkalinity and is stable at 70 but will be hydrolyzed into di-sodium phosphate when boiled .
Application:
Used as buffering agent, emulsifying agent , nutrition intensifier and quality improver. regulate PH value and intensify water retentivity of meat ,intensify the machining character of noodles products and improve its quality ,as quality improver in can products , fruit juice drinks and Dairy Products etc,prevent fruit from chaning color after machining ,emulsifier for cheese, additive for soy and soybean milk ,also as detergent for egg,etc.
