Dry red wine from a very particular grape variety: Jaen, just produced in Dao Region in the center north of Portugal.
Quinta da Boavistas Vines
The total area of eight hectares with a south-western exposure has a vineyard density of five thousand feet per hectare, lead in double Guyot, 60% Jaen, 40% Portuguese Touriga - fifteen years old, producing an average of four tons per hectare.
Vinification
When the grape reaches the desired maturity, it is hand picked and transported in boxes to the wine cellar. The cellar has a capacity to produce fifty tons of red grapes and fifteen tons of grapes for rose and white Wines. The wines are fermented in stainless steel fruit-presses and press tubs. This allows for a variety of techniques such as hot or cold pre-fermented extractions, hot post-fermented maceration, etc
The Wines are then trained in French and American oak casks.
Oenology
The person responsible for the oenology is Joao Malheiro Tavares de Pina, who is also in charge of the commercial side of things.
The Wines
Together with the quality of the soil and the mild end of summer temperatures, provides a slow and long process of maturity, giving the wine an elegance and freshness, equal to this region. This longevity adds to the balsamic characteristics that gradually appear together with the blending of the berries of both lineages, Touriga Portuguesa and Jaen, from which a complex bouquet arises; this evolution of the tannins produces a velvety, soft, palatable taste. The ruby red colour is the expression of the cheerfulness and joviality
JAEN
A medium sized compact cluster. The berries are small and uniform with a very thin blackish-blue skin and with a thin wax layer, a colourless flesh, soft and juicy. If left to mature physiologically balanced, the result is unproductive due to high levels of sugar. In this case we wait for a phenol maturity, obtaining wines with great colour intensity, considered at times, the highest intensity out of all the vine lineages produced here, with an excellent tannin quality. This gives the wines an intense aroma of sweet, ripe, fruity flavour mix with large variety of shrub species.
