ORIGIN AND TERROIR :
Chateau Castillon is located on old schist and limestone terraces in Peyriac, Languedoc. South orientated, centenary vines associated to young vines of Syrah and Grenache give fine and well balanced grapes.
GRAPE VARIETY :
Grenache, Syrah
VINIFICATION TECHNIQUE :
A manual harvest and carbonic maceration is used for the old vines. The aromatic varietals are vinified in prefermentation to extract long, blended and silky tannins so they give all their expression to the grapes.
TASTING :
Fleshy and fruity, this wine, with a garnet-red color, develops blackberry and blackcurrant aromas. Its maturing in barrel adds hints of grilled almonds and vanilla.
GOURMET ADVICE :
Served at room temperature, this wine will match perfectly with dishes in sauce, games and red meats.
