David Michael's specialty in fruit flavors lies in Fruit WONFs, which allow for blending of natural fruit ingredients that provide a more multidimensional flavor profile than straight fruit essences or oils. Our offerings range from the everyday to the exotic-such as the array of fresh tropical fruit flavors we developed following a flavor research trip to the Carribean.

We sampled many of the local fruits, including those listed below. Based on this research, we then returned to our flavor labs and re-created these flavors for those interested in a taste of the true Carribean culture.

Oyaheite apple-larger than a regular apple, with a taste like pineapple
Soursop-a large spiny tropical fruit with tart pulp related to the custard apple
Tamarind-a tropical evergreen tree yielding long pods with edible chocolate-colored acidic pulp
Acerola cherry-acid red or yellow cherry-like fruit of a tropical American shrub very rich in vitamin C
Ortanique-an extra juicy tangy sweet cross between a tangerine and a orange
June plum-a tropical fruit with yellowish-green or charteuse skin and a sweet white flesh
We also have the familiar flavors of Jamaican guava, tangerine and mango.
We also offer fruit enhancing flavors created to restore the notes lost during processing. This line, called Fresh Flavor, provides a non-characterizing way to "brighten" processed fruit products such as fillings and juices.
