nickname used in Thailand.
The #17 Ruan Zhi variety of Oolong tea is now grown very successfully in Thailand's famous tea growing area of Doi Mae Salong in the mountains of Chiang Rai province in the extreme North of Thailand.
This is a high mountain tea grown at at altitude of 1000m - 1200m ( 3300 feet - 3800 feet ) - on a family owned small tea plantation
The tea is hand picked and prepared locally using traditional methods
This #17 Ruan Zhi Oolong tea is only lightly roasted and after infusion produces a liquor with a light to medium jade green colour. The tea has a rich aroma and the flavour is very distinctive and complex with a touch of flowery sweetness and displays very little bitterness even after several infusions.
Oolong Tea
Oolong tea comes from the same plant - Camelia sinensis - as all true teas. It is the most common of Chinese style teas served in Chinese restaurants around the world
It is a partly oxidised or fermented tea - which places it somewhere in the middle between a Green Tea and a Black Tea
The degree of oxidation varies quite widely between 10% and 70% - compared with a Green tea which is less than 10% and a black tea which is more than 70% and typically more than 90%. The degree of oxidation determines the colour and overall taste of the tea
The flavor and aroma of Oolong tea is like a mix between the fresh aroma and taste of a green tea and the richer, full-bodied aroma and robust taste of a black tea
Health Benefits of Oolong Tea
The health benefits of Oolong tea are very similar to those of Green Tea or indeed any tea. Oolong tea is definitely one the most healthy drinks that you can consume. It is very rich in the polyphenols that act as anti-oxidants to fight the damaging free radicals in your body.
Oolong tea is also widely regarded as helpful for slimming and weight loss. This is because the tea causes your body metabolism to increase and therefore burn more calories and also it causes the release of enzymes that dissolve triglycerides in your body (body fat). These two effects allows your body to burn fat more efficiently and so less fat will be deposited in your body.
Drinking Oolong tea regularly will help in any weight loss program.
Oolong tea is also very good for the digestive system and can help to relieve constipation

Oolong Tea Preparation
Oolong tea is very easy to prepare
Simply add hot water at 80 - 90 degrees celsius (175 - 195 degrees fahrenheit). Do not use boiling water - as the taste will not be as good.
To get water at the correct temperature - bring it to the boil and then let it stand for about half a minute before making the tea
Oolong tea can be made in a regular cup or in a teapot - according to your preference. Add a little hot water first - to warm the cup or pot - then throw away the water. Add the Oolong tea leaves - then fresh hot water - and leave for 2-3 minutes
Tip: If you want less caffeine in your tea - add the hot water to the Oolong Tea leaves for 5-10 seconds then throw away the water. Caffeine dissolves very quickly in water and a significant amount of the caffeine will be removed from the leaves - but the other useful and beneficial ingredients will not be lost as they take longer to dissolve in the water - which is why tea leaves are infused for 2-3 minutes - to allow the flavor and useful chemicals to come out into the water.
After drinking - you can add more hot water to the leaves to make more tea - the taste will be almost the same - and it will still contain beneficial ingredients from the tea
You can repeat this 4-5 times before the tea loses its fragrance and flavor.
Oolong tea is normally consumed without adding milk, sugar or other ingredients - but you can add these if you prefer.
It can be be drank either hot or cold. For iced Oolong tea - simply pour the hot tea over some ice in a cup or glass.
