Compared with other frozen method, liquid nitrogen frozen has the following obvious advantages:

(1) fast freezing time (freezing rate than the general method about 30 to 40 times faster) : using liquid nitrogen frozen, can make the food quickly through 0 ℃ ~ 5 ℃ maximum ice crystals growth bands, food researchers have made a beneficial attempt in this respect.
