Anthocyanins are natural pigments that occur in many fruits and vegetables, for example, strawberry and red cabbage. Once extracted, these pigments can be successfully used to colour soft drinks, dairy desserts and fruit juices. Changing the pH level alters the shade and stability of the colour. Low pH level creates a rich red colour, which then goes through purple to dark blue as the pH level is increased. We specialise in three natural ingredients: Black carrot and Grape skin extract and Red Cabbage . Black carrot is derived from carrot, achieving a superior result as a food colour than other common anthocyanins, since it keeps its features at higher pH levels and it is more stable to heat and light. Grape skin extract is a complex made by the combination of pigments that can be extracted from the skins of red grapes.
