NAME: BIANCO DI ORNELLA ? IGT   (sweet white).
 
ALCOHOL CONTENT: 13 % vol.
 
GRAPE VARIETIES USED: lateharvestVerduzzo with the addition of vine-dried Sauvignon and Traminer, in varying proportions depending on the vintage.
 
PRODUCTION AREA AND EXPOSURE: vineyards of Campo di Pietra, in the Piave River basin, south-east of Treviso.
 
SOIL TYPE: caranto, a type of terrain which derives from the weathering of sedimentary rocks, rich in potassium and with a balanced proportion of clay and humus. 
 
TRAINING SYSTEM : Guyot and Sylvoz short cane
 
VINTAGE: Super-ripening and very late harvest (end of October). The Sauvignon and Traminer grapes are harvested during the first ten days of September and the drying process continues in a naturally-ventilated fruit room until late December or early January.
 
VINIFICATION: soft pressing of the whole grape. Cold settling of the must and fermentation and fermentation in small barrels made of oak and other types of wood. The alcohol fermentation process is blocked by the cold winter weather and by the high alcohol content, leaving the wine with a high concentration of sugar.  
 
MATURATION AND AGEING: in barrels for approximately 24 months where the wine remains in contact with its own yeasts, before being placed in stainless steel containers where it remains for a few months, during which the clarification process takes place; it is then aged in bottles for a further 12 months.
 
ORGANOLEPTIC CHARACTERISTICS: Golden yellow in colour, a full-bodied wine with fragrances reminiscent of raisins and candied fruit. Sweet flavour, balanced body, extremely pleasant to the taste.
 
SUGGESTED PAIRINGS: A meditation wine, it is ideal with dry cakes, and also makes a superb pairing with game pat¨| and blue cheeses.
 
HOW TO SERVE: at a temperature of 8-10??C in small long-stemmed crystal glasses.
