Cabernet Sauvignon 2006 Dry Red Wine

Vineyards: Galilee and Judean Hills

Varietals: 93% Cabernet Sauvignon, 7% Petit Verdo

Wine Notes: This deep and intensely colored wine is produced from the initial free-run juice. This wine exhibits aromas of elegant flavors of plum, raspberry, cassis and Black Berries with subtle flavors of mocha, vanilla and honey resulting from aging in both American and French oak barrels. The finished texture is velvety with a bit of sweetness. The wine is unfiltered it is good for drinking now and has a long aging potential. Winemaking: This wine was produced from the superior quality free-run juice of the grapes which are hand harvested, before undergoing its gentle pressing process. The wine was aged for 12 months in oak barrels and bottled unfiltered.

Growing region: Galilee- The climate in the northern Galilee is characterized by its quota of cold weather. The red soil in the vineyard on Kfar Yuval, at one time, interfaced with the waters of the Hula Lake. The soil is exceptionally rich and airy, excellent in its drainage qualities. Its airy quality is thanks to the small rivers scattered in the area similar to that in the region of ""Haute-Medoc"" in Bordeaux or in ""Cote-Rotie"" in the Rhone Valley in France. The abundance of minerals and their intensity is what characterizes the wines produced from grapes grown in the Galilee.

Judean Hills: Situated at an elevation of 800-1100 meters above sea level, this region is particularly suited for the cultivation of this variety. Facing west with late afternoon winds, this open region allows for a late harvest between the middle towards the end of October. The grapes from the Judean Hills posses extremely concentrated and powerful fruit flavors, providing the wine with its excellent aging potential.
