Sodium Ascorbate is one of a number of mineral salts of ascorbic acid (vitamin C). Sodium ascorbate normally provides 131 mg of sodium per 1,000 mg of ascorbic acid (1,000 mg of sodium ascorbate contains 889 mg of ascorbic acid and 111 mg of sodium). Sodium Ascorbate is a white or slightly yellow crystals or powder, a little acid.m.p.190°C-192°C, easily soluble in water, a little soluble in alcohol and uneasily soluble in Ether and chlorofom and other organic solvent.
