Introduction: Amaranth, which contains the smaller edible grains in the world, was cultivated and domesticated in the Andes thousands of years ago. It played a major role in the nutrition of the Inca Civilization. amaranth was even found beside Andean tombs of over 4000 years old. In present, after important discoveries about their nutritional value, Amaranth retook its popularity and its exports increases every year to many parts of the world.
Description: It is a dicot plant. Its central stalk can reach 2 to 2.5 m in height at maturity, although some varieties are smaller. The cylindrical branches can start as low as the base of the plant, depending on the variety. The main root is short and the secondary is directed downward into the soil. Its showy flowers of orange to purple color sprout from the main stem, the inflorescence sometimes reaches up to 9 dm. Its seeds are small and of different colors according to variety.
Origin: Native to the Andes, it is developed at an altitude between 1500 and 3500 meters. The main producing areas in Peru are Junín, Cajamarca, Ayacucho, Ancash, Huancavelica and Cusco.

Importance of Amaranth: The grains of Amaranth have a very thin and soft fiber and have a more balanced composition than conventional cereals, which makes them ideal for daily consumption. Amaranth grains contain between 13% to 18% protein. They also contain calcium, phosphorus, iron, potassium, zinc, Vitamin E, vitamin B complex and the following essential amino acids: arginine, lysine, isoleucine, leucine, threonine, valine, phenylalanine, histidine, methionine and tryptophan.
Uses of Amaranth in different industries:
Food Industry: as grain or flour, is used in soups, stews, salads, custards, pancakes, breads, etc. The flour is also used for the manufacture of bread, tortillas and as a breakfast cereal.
