Description
Purple sweet potato color is a
natural edible pigment
extracted from
scammony purple sweet potato
that is planted locally, and is rich in a nthocyanin ,
flavones and
minerals. It is soluble in
water and ethanol, and
has characteristic scent of potato with pure and soft taste.
Anthocyanin
as has function of anti-oxidation, anti-aging and anti-fatigue, and can enhance body immunity for long term consumption.
Color and stability
The solution color can’t fade under light for a long time,and also has good resistance to high temperature in an acidic medium.
At PH 2.0-6.0, the color is red or amaranthine; at PH 7.0, it is blue: at PH above 7.0, it is unstable green.
