Description

1.Almond's high nutritional value, and the nutritional value of almonds richer. Almonds are rich in monounsaturated fatty acids, good for heart health; vitamin E and other antioxidants, can prevent disease and premature aging. Almonds contains 27 percent protein, fat 53%, 11% carbohydrate, 111 milligrams of calcium hectogram almonds, phosphorus 385 mg, 70 mg of iron, also contains a certain amount of carotene, Ascorbic Acid and amygdalin and so on.

2.The sweet almond contains about 26% carbohydrates (12% dietary fiber, 6.3% sugars, 0.7% starch and the rest miscellaneous carbohydrates),  and may therefore be made into flour for cakes and cookies (biscuits) for low-carbohydrate diets. A standard serving of almond flour, 1 cup, contains 20 grams of carbohydrates, of which 10 g is dietary fiber, for a net of 10 g of carbohydrate per cup. Almonds contain polyphenols in their skins consisting in a combination of flavonols, flavan-3-ols, hydroxybenzoic acids and flavanones analogous to those of certain fruits and vegetables.

The almond oil is a lightweight, golden-brown oil which is extracted from sweet almond nuts. The oil from bitter almond nuts on the other hand, are extremely poisonous and should be avoided. Half of the weight of the sweet almond nut itself comprises of the oil and therefore can be extracted in large amounts. In its pure form, it has little to no odour and has a faint, nutty scent. The oil has a long and extensive history, dating back to the Egyptians where it was used to strengthen hair and as a skin emollient.

More than 50% of the oil comprises of monounsaturated fatty acids, making it suitable to be used for culinary purposes as it helps reduce blood cholesterol levels. The oil is also rich in minerals such as magnesium and the vitamins C and E.
