The Cayenne pepper plant (Capsicum annuum), is a mostly perennial plant that is part of the nightshade family. When fully mature, this shrub-like plant averages about 3 feet in height and 2 feet across. Cayenne's densely-packed leaves are usually dark green, offsetting its delicate flowers, which are small, white, and star-shaped. The Cayenne pepper pod is characteristically slender, ranging in length from three to eight inches long and, when ripe, varying in color from golden yellow to a brilliant red.
Cayenne prefers to grow in warm, subtropical and tropical climates, though it can easily be cultivated as an annual in more temperate areas.
Cayenne may have originated in Central and South America, and has been used by the natives there for culinary and therapeutic purposes for over 7,000 years. In fact, Cayenne was a highly valued delicacy for the Aztecs! Today, the largest producers of Cayenne are China, Turkey, Nigeria, Spain, Mexico and India.
Cayenne peppers are available whole, but are frequently dried and ground into flakes or powder. Cayenne is commonly used in cooking, but its use as a dietary supplement is becoming more prevalent as new research reveals more of its many benefits.
