Chicken in Curry sauce
Shelf-stable meal, ready to eat.
The product is elaborated by professional cooks in the traditional way.
Once ready, the product is poured in the tray, where the internal atmosphere is replaced by a protective atmosphere and then, hermetically sealed.
The product is sterilized by heat treatment. This treatment allows room temperature storage for a long time.
2.-INGREDIENTS
Chicken meat (60%), water, onion, extra virgin olive oil (2,5%), garlic, parsley, curry, cornstarch, yeast extract, colourings: E-120, E-160b, stabilizer: xanthan gum, antioxidants: ascorbic acid, sodium citrate, white pepper, salt.
Packaged in a protective atmosphere
3.- MICROBIOLOGICAL SPECIFICATIONS
Product sterilized by heat treatment.
The product is considered as a Low Acid Food (pH≥4,6), so the target microorganism is Clostridium botulinum (D121,1=0,21 min, z=10ºC).
The sterilization process must reach at least a Fo value ≥3 (Commercial sterilization)
Before expedition, every batch is subjected to a microbiological stability test (Incubation of a batch sample for 7 days at 37ºC).
The product is considered microbiologically stable if the next requirements are achieve:
1) Absence of deformation of the tin after the incubation period.
2) Absence of significant changes in taste, flavour, colour, appearance and texture of incubated sample comparing with non-incubated sample.
3) pH difference must be < 0,5 between incubated sample comparing and non-incubated sample.

9.- ELABORATION INSTRUCTIONS
Microwave: Remove case and pierce film in several points. Place the tray into the microwave and heat it for about 2 minutes at 800W.
Frying pan: Pour the tray content in the frying pan and heat itover low heat for about 5 minutes, while constantly stirring.
