The Victor Fernandes Cheese Factory is producing Azeitão Cheese since 1988, started by learning how to make cheese with the famous cheesemaker Alfredo, best known as "Migalheiro" the Quinta Velha.
Through his knowledge and experience, together with the peculiar geographical conditions of this region, and pastures needed for sheep breeding, as well as an extraordinary exuberance of flora ensure the milk that allow the production of this cheese all year.
Today there are three counties that enjoy the natural riches of Serra da Arrábida, which is due to the uniqueness of Azeitão Cheese, and which are integrated in the demarcated region of this cheese.
