Norwegian prawns are fished by our trawlers in the harsh cold of the Barents Sea. Because our prawns are fished in very cold waters, they mature slowly, which produces a different (slightly sweeter) taste than their warm water cousins.
And because they are fished so far from the coast, they are frozen as soon as they are caught. Prawns are traditionally eaten with mayonnaise in the south and south-west of Norway as a summertime snack.
