Flaked frigate mackerel, which is called "mechika" in Kansai, is prepared in its habitat of Shikoku and has a strong flavor thanks to its abundant meat dark with blood. Its preparation takes a long time. First, flaked Fermented mackerel, which has a mild flavor, is mixed in, and then mackerel and sardines are added. Frigate mackerel can be used for soba tsuyu dashi stock and has a rich flavor, but achieving a delicious dashi does not take only this fish but also a mix of mackarel and sardines combining their subtle individual notes. The flavor of the flaked mixed fish and the intensity of the frigate mackerel remain in the finished product together with an umami taste. It can be used for the dashi stock for a strong miso soup or for soba and can significantly improve the taste of food. It is seasoned to adjust the taste.
After putting one bag of the product in boiling water, reduce the heat and keep boiling for approximately 10 minutes.

We have the ability to source ingredients from anywhere in Japan. We can also procure bonito from overseas, primarily from the Philippines and Indonesia. In addition to dried bonito, the ingredients we carry include dried, smoked mackerel; dried sardines; dried mackerel scad; and dried young bluefin tuna. You can specify ingredients in accordance with what you will be using them for.
It is possible to place an order for the specific products that suit your purposes, from bonito flakes for soup stock, to bonito flakes that can be sprinkled over dishes. As for liquid stocks, in addition to soup stocks that emphasize the natural flavors of their ingredients, we can also produce mentsuyu (dipping sauces for noodles).
All of our products can be made-to-order, with everything from the selection of ingredients to the manufacturing method tailored to the needs of the customer.
