Summer in Nova Scotia is characterized by the swordfish which appear in late June, migrating along the warming Atlantic waters up flowing from Florida. Active at night, swordfish feed by diving into the chilly depths, using their saber-sharp bill to slash their way through schools of smaller fish, especially squid.
Following a rich cultural tradition, Nova Scotias harpoon fishermen hunt for mature swordfish basking, or finning, near the surface in the warmth of the gulf stream, after a night of feeding. When one is spotted the boat must approach it stealthy and then the harpooner attempts to spear it with a 4 to 5 meter long harpoon attached to a line. The swordfish average about 140 lb (65 KG).
Fishermen pride themselves on the high quality of their catch, resulting from the careful handling and icing of each swordfish after it is harpooned, resulting in outstanding product, filled with amazing flavour, texture, and colour. With no by-catch, harpoon-swordfishing is a highly sustainable fishery.
