Red yeast rice is fermented by inoculation of Chinese Monascus anka naka zawa & K. sato on rice. It has been used as both traditional medicine and nutrition supplements in daily lives for more than one thousand years. It described in a famous ancient Chinese medical textbook, ?Compendium of Materia Medica?. The special effects of RYR are to maintain the spleen, gastrointestinal and circulation systems healthy.
In 1976, a Japanese scientist, Endo Akira identified the effective component, Monacolin K (or Lovastatin) in small quantity from the metabolic products of monascus . Monacolin K can reduce the cholesterol level of blood. The findings offered the strongest scientific evidence to explain why RYR could function in regulating the lipid level of blood.

Through scientist hard working, several species were selected from traditional eatable monascus . By using modern microbiologic culture, a process is settled which can produce rich monacolin's red yeast rice with natural fermentation.
