Oltrepo Pavese RED WINE (Italy)

A name with resonance, which is derived from a vineyard of the same name.
This belongs to Marehese Adorno and is the source of the winery's top wine.
It is made from local grapes; Barbera (85%) Croatina (10%), Uva Rara (5%)
harvested from vines that are more than 50 years old.
Vinication
The vinication is carried out using traditional methods,
with long maceration interspersed with "rack and return" of the juice.
The wine is then run off into 500 litre wooden casks for the malolactic fermentation,
before maturing in wood for an average of 18 months.
During this phase, the wine is racked off its lees periodically to avoid the need for filtration.
After bottling, the wine matures in glass for at least 12 months more,
before being released to the market.
Tasting Notes and Serving
Colour: Deep ruby red, with violet reflections.
Nose: intense and complex; aromas of violets, red fruit and spice,
and an elegant undertone of oak.
Palate: rich, well structured and persistent. It has the hallmark acidity that is typical of
local varieties from this region.
Best served at around 18°C, with red meat, mature cheeses.
It is also a good choice with game birds.
