good balance between freshness, vigour, delicacy and fruit.

The grapes are picked at full maturity. They are destemmed

then placed directly in the red wine vat and left to macerate for

12 hours. We bleed the vat drawing off 10 % of the must to

make our clarets, the remaining must becomes our red wine.

This method offer two advantages:

1/ Our red wines are more concentrated due to a better ratio

must/marc.

2/ Our claret is not subject to any harsh pressing.

The selected must will then be vinified in the same way as our

white wines: Racked off their heavy lees, and the cold liquid is

placed in cats, selected yeast are added and the temperature is

controlled throughout the fermentation
