This preparation is also available without black truffle, a prized ingredient but not appreciated by all palates.
Served cut into half moons 1 cm thick with a salad of blanched potato sticks and prized black truffle. Or with a delicate pat¨| of penny bun mushrooms and black truffle, or buttered croutons and vegetable pat¨|. Try the version without truffles, too, with a salad of dried fruit and grapes, or even with a pickle of pumpkin, black fig and pears or with a mixed fruit and spice compote.
