As a child growing up in Korea, I lived eating my mother's buckwheat soba noodles with homemade soy ginger sauce. That's why I created a quick and easy version of this flavorful dish. Made with organic soy sauce and organic Asian ginger, my sauce is lighter than my Mom's, yet still savory with a touch of sweetness.

And you can serve the hearty noodles and sauce in many different ways - one night, try it as a quick dinner; next time make a delightfully different side dish. Or, enjoy it my favorite way - as a soba salad with broccoli, snow peas, salmon, scallions, sesame seeds and toasted try seeweed. Yum!
Make it simple
Cool Noodle Salad - Cook and drain the Soba noodles as directed on the package. Add sauce. Garnish with julienne cucumber and daikon radish and chopped scallions. Serve them the traditional way at room temperature or chilled.
