Abraham's Westphalian bone ham with salsify salad
500g fresh salsify
2 tbsp flour
2-3 tbsp vinegar
4 tsp orange juice
Freshly ground white pepper Salt
3 tbsp soya oil
50g corn salad
4 slices of Westphalian ham on the bone
Brush and peel salsify under water. Place in cold flour vinegar water immediately. Cut salsify into 5-7 cm long pieces. Cover in salted water and cook for around 10 minutes. Prepare a marinade of orange and lemon juice, salt, pepper and soya oil. Strain the salsify, leave to drain and turn in the marinade when lukewarm, then place into refrigerator. Clean corn salad. Place under the salsify shortly before serving. Serve on four plates with a decorative arrangement of Westphalian bone ham.
