Introduction:
Cacao is scientifically known as Theobroma cacao, from the greek "Theos" which means "God" and from the greek "broma" that means “food”, referring to the importance of this plant to the natives. There are approx. 20 species of the genus Theobroma, however, the most important for its commercial value is Theobroma cacao, because their grains are use to manufacture cacao powder and cacao Butter.
Our Cacao Variety: Criollo
Criollo Cacao represents less than 10 percent of world cocoa production. Criollo Cacao is the most expensive and it is the most sought after of all varieties of cocoa, because it is very difficult to find. Criollo Cacao is appreciated as the variety of cocoa with the best flavor and is recognized as the highest quality.
Origin: Native to South America. The first Cacao trees grew naturally in the rainforests of the Orinoco River and the Amazon River about 4000 years ago. The Cacao producing areas in Peru are located in: Tumbes, Piura, Cajamarca, Amazonas, San Martín, Huánuco, Ucayali, Junín, Ayacucho y Cusco.
Used Parts: Beans (Grain).
Properties: euphoric, stimulating, exhilarating, increases libido and predisposes to greater sexual desire, by the action of the phenylethylamine component. It is a great antidepressant, improves glucose metabolism and lowers blood pressure.
Uses of Criollo Cacao in different industries:
- Cacao Beans: for the manufacture of cacao derivatives (nibs, cake, powder, butter, liquor).
- Cacao Nibs: as an ingredient for the manufacture of chocolate products. Also, it is use directly in ice creams, cakes, desserts, smoothies, etc.
- Cacao Powder: as an ingredient for the manufacture of chocolate drinks, cookies, etc. Also, it is used directly in ice creams, cakes, desserts, smoothies, etc.
- Cacao Butter: as an ingredient for the manufacture of chocolate products. Also, after going through a deodorization process, it is used as an ingredient for the manufacture of skin creams, soaps and beauty products.
- Cacao Liquor: as an ingredient for the manufacture of chocolate products.
